Introduction


Dr. Anita Arya is presently working as an Associate Professor in the Department of Livestock Products Technology, College of Veterinary & Animal Sciences, G. B. Pant University of Agriculture and Technology, Pantnagar, Udham Singh Nagar, Uttarakhand – 263145. She is also serving as the Associate Director of International Affairs. Of University She completed her graduation and post-graduation from G. B. Pant University, Pantnagar, Udham Singh Nagar, Uttarakhand, and earned her Ph.D. from ICAR–Indian Veterinary Research Institute, Bareilly, Uttar Pradesh, India. She specializes in the processing and value addition of dairy and meat products. Her areas of specialization include the use of natural preservatives (essential oils and herbal extracts) for foods of animal origin, and the development of millet-incorporated dairy products.

Presently, she is working on herbal extracts as antimicrobial and antioxidative additives for foods of animal origin. She is also involved in research on ultrasound-assisted extraction and microencapsulation of herbal extracts. Her work includes different herbs such as Ashwagandha (Withania somnifera), Jimbu grass (Allium hypsistum Stearn), Timur (Zanthoxylum armatum), and Ambo haldi (Curcuma amada).

She has undertaken 10 national capacity-building training programs under different universities and institutes. She completed a one-month international overseas training program at Oklahoma State University, USA, in 2023 under Dr. Divya  Zaroni, Associate Professor, Food Microbiology, Oklahoma State University, USA. She also completed a 7-day overseas training program in France under DEFIAA. (Developing French Indian exchange in Agrofood and Agronomy under the French Ministry of Agriculture)

She has completed university-funded project on value addition of goat by-products and an ICAR-funded project titled “Training to farmers/unemployed youth on Clean Milk Production and Processing of Dairy Products.”

Dr. Arya has published 22 research papers and 14 review papers. She also serves as a reviewer for reputed journals with good impact factors, including Journal of Food Science and Technology (Springer), Journal of Food Processing and Preservation, International Journal of Biological Macromolecules (Elsevier), Nutrition and Food Science (Emerald), and International Journal of Livestock Research
